• While hot pepper isn’t usually considered a staple of French cuisine, this is no ordinary pepper. Coming from the town of Espelette in the Basque region of France it is definitely a staple of that region. During the annual harvest all the village houses are covered with the drying peppers! With a mild piquant flavor, it adds a distinct flavor to many dishes, including rice, pasta, egg dishes, chicken, pork... EXPERIMENT!

Just as French wines can earn the distinction of AOC (Appellation d’Origine Contrôlée) which enforces strict rules of production and place of origin, the pepper of Espelette has also earned this proud distinction.
